Chef Antoine is also known as the chef in Batik, a French native who fell in love with Asian food. His journey through Asian food experience began in Bangkok, Thailand. Then he moved to Jakarta, Indonesia, found Indonesian cuisine is very underrated on the world culinary stage. He dedicated his time traveling around Indonesia to record & document lost recipes, traditional medicines, ingredients specifications, cooking methods and most importantly creating some lasting friendship bond with the multitude of people that he met along his road. He was subdued by the varieties of ingredients, the cooking technique & all the culture associated with this cuisine. Through his passion and experiences in Indonesian food, he opened Indonesian restaurants in Hong Kong, Bali, and Jakarta.
